The Queens-native and Cuban-American owner Charles Wekselbaum, studied at the French Culinary Institute and lived in Spain where he trained in the methods of curing and preserving meats. He started the business in 2011 with a mission to honor this ancient and traditional craft while also sourcing pasture-raised and sustainable meats. He is based in Long Island City and is a resident of Astoria, Queens.
